Brewery History and Background:
We began brewing as a private organization in 1876,
and in 1918 finally incorporated at Azakura Shuzo. In
1970, in order to accommodate changes in society and
the business environment, we decided to modernize, and
moved our brewery to our present location in Ozawa of
Yokote city. The following year we combined with another
brewery, Yokote Meijo brewery. Today we are Yokote city's
only sake brewery, and we continue to brew dependable
sake for the people of this region.

Brewery History and Background:
Founded in 1918 by some enthusiastic local people. At
that time, we brewed about 200 kiloliters a year. During
the war, we continued to brew sake despite many companies
being closed down by the government. Following that,
we put a lot of effort into selling sake in other prefectures,
and created a brand for outside of our prefecture, called
Akita Tsuru. Today, we put most of our effort into premium
"special designationモ sake. Using brewers from the local
region, our goal is to establish brewery to make sake
that uses labor-intensive hand-made methods.
Origins of the name:
Back at the time of our founding, there was a spring
where in the morning the crane would come to drink,
and dance in the sky; hence the name Asanomai, or "morning
dance." |

Brewery History and Background:
In 1917, our founder, Soukou Kakizaki founded Asamai
Shuzo with a colleague with capital of only 20,0000
yen, and sold shares for 500 yen each. In 1923, we won
a bronze medal at the Heiwa Kinen Hakurankai Peace Memorial
Exhibition, and from 1934 we won four consecutive gold
medals at the national sake tasting competition. Back
in 1943, we were forced to cease operations by the government,
but were granted a license to brew again the following
year. We have continued uninterrupted since then. Recently,
we have accomplished the remarkable feat of winning
five consecutive gold medals in the national new sake
tasting competition using Akita rice, and yeast called
AK-1 developed in Akita prefecture.
Origins of the name:
The name Ama no To was given by our founder, Soukou
Kakizaki, a devotee of historical Japanese Literature,
and is taken from the lyrics of a old song from such
literature that read "Quietly open the door to heaven,
and let the sunlight shine upon the green leaves of
cedar trees in the holy mountain." Our sake is an expression
of the skills and senses of our young toji brew master,
Koichi Moriya, and the other brewers. In his book describing
the challenges of brewing, "Natsuta Fuyuzo", Mumyosha
Shuppan, he warmly describes the brewers and others
involved in the making of sake. Sake created in this
environment is fine-grained and free from off-flavors,
fragrant and something you never tire of. Hiraka town
Asamai, where the Ama no To brewery is located, is where
the best rice farmers in all of Japan are located, with
18 thousand tons of rice being produced here each year.
Here are a group of devoted farmers that have formed
the JA Hiraka town Sake Rice Research Group nine members,
headed by Mr. Kazuyoshi Sato, that grow sake rice such
as Miyama Nishiki and Gin no Sei. Using this, we have
won five consecutive gold medals in the national new
sake tasting competition. |

Brewery History and Background:
As our company name, Bizen Shuzo Honten indicates, we
originated in the Bizen region of Japan. About 300 years
ago, our founder boarded a ship from the Bizen region
modern day Okayama, coming here to live, set up business,
and establish the house of Bizen. Sake brewing began
four generations ago, in 1914, started by Saiji Bizen.
We began production of junmai-shu early on, and our
junmai-shu still enjoys a good reputation today, even
amidst variety of other products.
Origins of the name:
Our second generation president, asked Mr. Mansuke Tsuchida,
a peer senator, to choose a name, and he chose to name
the sake Dainagawa after the river of the same name
(Dainagon river) that runs through the middle of town. |
